Cold Tomato Basil Pasta
Tomato Basil Pasta is one of our favorite Summer go-to meals. The fresh ingredients from my garden make it perfect as a cold meal when it’s just too darn hot to cook. We also tend to spend a lot of time in the sun, hot food just isn’t appetizing.
Basil is ALWAYS a good idea!
I love, love, love fresh basil and will add it to just about anything. Usually I plant somewhere between 6 and 8 plants every Spring and it never goes to waste. Basil is terrific for freezing or making infused oil for recipes, so we end up using every single leaf! For this recipe, the flavors of the tomato and mozzarella just make my basil that much sweeter. Hot or cold, mozzarella makes everything better
As I mentioned, we like it cold, but you can also serve hot. You can either throw all the ingredients into a bowl and skip refrigerating, or saute the basil, tomato, and seasonings in the olive oil and lemon juice first. Remove from heat, add pasta, and stir in your mozzarella while still hot. You won’t have the yummy chunks of cheese, but you will have a nice creamy sauce.
Either way you decide to place this dish on your table, I’m sure it will be a huge hit! Toast some garlic bread to go with it, or tear a loaf of Italian bread into chunks and serve with an olive oil dipping sauce.
