Orange Cranberry Muffins are among my favorite breakfast treats. The sweetness of the orange zest mixed with the bursts of cranberry zing just wakes you up and get you going. All wrapped up in a moist, airy baked good that you can carry out the door with you. Oh yes, that’s my kind of morning. I love to freeze muffins for a quick, to-go breakfast. Forty seconds in the microwave and they’re almost as good as straight out of the oven.
If you like a lot of tartness, you can even add more cranberries, or as I did, leave them whole. You’ll get a giant burst of tarty taste with every bite. I also like to top them before baking with whole cranberry or two, just for looks!
